Ingredients:
- 225g Self Raising flour
- Pinch of Salt
- 140g Mouse House Vintage Cheddar
- 55g Chilled Butter- cut into cubes
- 1 tsp Baking Powder
- 95ml Milk
Method:
Step 1: Heat the oven to 200C/180C fan/gas 6 with a large baking tray inside.
Step 2: Next, sieve the flour, salt and baking powder into a bowl.
Step 3: Add the butter to the bowl and combine with your fingertips to create breadcrumbs. Sprinkle 120g of the Vintage cheese into the breadcrumb mixture and mix together gently with your fingers. Ensure you don’t overmix, as the butter will start to melt.
Step 4: Create a hole in the middle of the mixture and pour around 20ml of milk in to combine it into a dough. Add more milk gradually until the dough is firm and is the correct consistency.
Step 5: Flour a surface lightly and roll out the dough to approximately 2-3cm thick. Start to cut the scones with a medium cutter about 8cm wide, then place onto your baking tray, with a sheet of baking parchment over.
Step 6: Glaze your scones lightly with some milk and sprinkle the rest of the Vintage cheese evenly on top of each one- place the baking tray back into the oven.
Step 7: Bake your scones in the oven for 15-20 minutes or until they’re golden brown. Once cooked, take out of the oven, let the scones cool and then enjoy!
